Few things make me happier than creating food! I create a variety of dishes, both gluten free and not.
Originally from British Columbia, I currently reside in Alberta and live in a household with a variety of food sensitivities, such as gluten, dairy, and eggs. It can be a challenge to find recipes that meet those requirements, and I’m constantly figuring out alternatives to ingredients that might not be able to be used.
In high school, I didn’t have any sensitivities that I was aware of, and dreamed of owning a bakery. I applied to the Art Institute of Vancouver, and though I was accepted, I didn’t end up going. The cost and leaving my hometown honestly scared me.
In my mid 20’s, working at a from-scratch Bakery, I discovered that gluten was bothering me, mostly through a brain fog. Needing to sleep but not feeling rested. I cut down on the gluten drastically and felt so much better. Dairy was next, as I seemed to constantly be clearing my throat. Once omitted, I felt noticeably better. Both sensitivities run in the family, as some extended members do have celiacs. Eggs were harder to cut, and harder to find alternatives to, but I eventually got that figured out too.
Baking with sensitivities can be frustrating, but also fun, as you get to play around with ingredients to suit your needs.
